cornbread and milk

Ken thinks that this is one weird combo. Maybe not as weird as my banana + mayonnaise + peanut butter sandwiches. Yes, I use all three, and it is so delish. The sweet peanut butter with the tangy mayo makes an oh so yummy combination.

But I never realized that cornbread & milk wasn’t a common meal!

I guess it’s a Southern thing, but I remember having this meal a lot while we were growing up. Always accompanied by a sweet vidalia onion. I remember Mom always dipped hers in salt, so I tried it recently … now I know why she does it. Seriously yummy.

So while Ken was teaching last night, I whipped up a batch of cornbread for my and Emma’s supper.

Of course, I used a cast iron skillet, because cornbread just isn’t good unless it is baked in a cast iron skillet.

I could barely contain myself from just picking it up and eating it like a pizza when it came out of the oven so golden.

So I hurried and crumbled it up, smothered it in milk, settled onto the couch and ate 1 2 3 bowls.

Emma only liked the milk, so she had a bowl of milk and a popsicle for supper.

But that’s okay, because that left me with just enough cornbread to butter and eat as a midnight 10pm snack.

It’s good … oh so good … being Southern.
