apple burritos {recipe}

I’m always looking for ways to make snacks healthier around these parts. I’m pretty lucky in that Emma likes fruit a LOT. And Lucy likes food. Just food. All the time. Anytime. MORE FOOD, MAMA.

But still, if I gave Emma the option of an apple or Oreos, I’m pretty sure she’d pick Oreos. Frankly, so would I, but that’s not what we’re talking about.

So when she came home from preschool with a recipe for apple burritos, I was all over it. Actually, so was she.

We FINALLY busted out the apples yesterday and gave it a shot. This is an adaptation of the actual recipe, since we are dairy-egg-peanut free, now.

Ingredients:

flour tortilla

cream cheese – we use soy cream cheese, mmmmm

cinnamon and sugar

apples – YES, I am “that mom” who over-pays for the pre-sliced apples

Step 1: warm up a tortilla for the baby to eat so that you can actually get this done in a timely manner

Step 2: warm up another tortilla and spread some cream cheese on it

Step 3: sprinkle on the cinnamon and sugar

Step 4: scatter some apples around

Step 5: roll roll roll it up

Step 6: eat

This was a total Emma-approved snack!

So easy, so good! I even took a bite of it, even though I’m trying not to snack every time the girls snack since Miss Lucy snacks a LOT, and Emma practically had to kick me in the shins to get it back.

Luke just did almost the exact same thing at preschool! Only they used graham crackers and called them s’mores.

Sweeeeeet! Love the recipe sharing! As a fund raiser at daycare they are collecting recipes for kids lunches and then the staff will make it into an email-able document and for a small donation they will send it to me! Totally awesome. Might get this one to be included! And I’ll share what I get back in return! ; )

it is a t-shirt from Old Navy, but it’s a hand-me-down from Emma, so 3 or 4 years old :/

that looks de-lish will have to try! LOVE the lucy foot :) so darn cute :) my miss muffet LOVES apples and tortillas like crazy so this will be a hit I reckon. I have a awesome super sweet and super good cupcake recipe,( no eggs, milk, or nuts)…..

Chocolate express cake
1 1/2 c. unsifted plain flour
1 c. white sugar
1/3 c. cocoa
1 tspn. BiCarb soda
1/2 tspn. salt
1 tspn vanilla
1 tspn vinegar
1/2 c. vegetable oil
1 c. water
Put all dry ingredients into bowl. Add vinegar, oil and vanilla. Gradually stir in water ( don’t over stir).
preheat oven at 190*C. bake for 20-30 mins or until toothpick comes out clean but don’t over cook.

I know you think vinegar …ugh yuck …but really you dont taste it promise :)

Also, Iris is always putting her feet on the table too. The number of times I say, “No toesies on the table…” is kind of ridiculous. Although, I do love some baby toes. : )

I’m excited to try this for an after school snack tomorrow, my Maddie always wants chips or cookies after school and I’m trying to slip in some healthier alternatives. Also cute to see that another child thinks their feet belong on the table when they eat, my son can’t concentrate on eating until his foot is propped up there! (I know I should probably break this habit before he gets any older, but I just can’t make myself be all serious-mom about it yet)

We’re totally having these after school today! They like all of the ingredients, so I’m sure they’ll love them put together like that. Hmmm, I wonder if applesauce instead of apples would taste good …..
